"""Full bottle 1,605 g. 40% Pinot Noir, 40% Chardonnay, 20% Pinot Meunier from Henry and Kaye Laithwaite's 6.5-ha vineyard in Marlow, Buckinghamshire. Organic farming. 30% barrel fermentation. 30 months sur lattes. TA 8.3 g/l, dosage 9.7 g/l. Bottled 4 May 2022, disgorged 6 December 2024. Almost luminously bright coral pink. This is my hands-down favourite roast-beef wine and tasting the new vintage doesn't change my mind in the slightest. In fact, I tried it this time with hot-smoked topside and it might even be even better with smoked beef. The Laithwaites are not afraid of dosage, and I love them for that (austerity is not always what it's cracked up to be, as some political commentators might attest) – especially because they use it so well, to amp the fruit and the purity rather than obscure it. Even though this was a very difficult vintage, somehow Henry and Kaye have still managed to make a wine that is a cornucopia of fruit, zigzagging from orange sherbet and sour-cherry sorbet to wild strawberry and nectarine. It's crunchy, alive, the acidity a zipline of energy and on the finish all the zinging salt and lime that would make a margarita fan very, very happy. Seriously, pair this with beef (oh, and also vitello tonnato – it's cracking with that).""
