Moppa Springs brings together Grenache, Mataro and Shiraz, varieties particularly well suited to the drier parts of the Barossa. The fruit is put through Rockford’s 1880s Bagshaw destemmer, fermented in open slate tanks and pressed in the winery’s old basket press, with the components then matured separately in seasoned oak casks before blending. It is a very traditional expression of these varieties in an unmistakably Barossa setting.
