Sparkling Black Shiraz is one of Rockford’s most distinctive wines and a continuation of a uniquely Australian sparkling red tradition. It is based on a mother blend dating back to 1978, with roughly one third bottled each year and the remainder refreshed with wine from the current vintage. The wine undergoes a second fermentation in bottle, spends time on lees before disgorgement and is finished with a dosage based on Rockford’s fortified Shiraz, creating a wine designed to gain further complexity with bottle age.
