The seventh release of Bollinger's PN cuvée, PN AYC21 is a 100% Pinot Noir Blanc de Noirs built around Aÿ and the 2021 base year. The blend is 51% 2021 with 49% reserve wines, including 2012, 2013 and 2014, and carries Bollinger's characteristic richness with a fresher, more saline profile. Half of the wine is fermented in oak and the dosage is 8g/l.

"An enticing, spicy nose of peonies, wild peaches and melon. Fine bubbles carry a tense, savory palate with lemon curd and meringue flavors. Refined in texture, with a long finish of orange peel and dried fruit. A pure, expressive pinot. Disgorged February 2026. 6 g/L dosage. Drink now."

"The seventh iteration of this excellent series of 100% Pinot Noir-based, village-focused cuvées. (See notes on the others here.) Based on the excellent 2021 vintage, from the grand cru village of Aÿ with a little wine from Tauxières and Mutigny, blended with 49% of reserve wine, with a quarter of the wines coming from 2012, 2013 and 2014. Aged for up to four years on lees. Dosage 8 g/l. Deep, deep coppery gold. Very Bollinger Pinot on the nose, with more than a hint of mushrooms already. Firm yet rich on palate entry, no shortage of fruit on the mid palate and then a long finish. Really rewarding, really lovely. Very different from a typical grower champagne – richer – but gorgeous."
